Stop by on a weekend morning and you’ll find kids lined up with their faces pressed against the windows of Nutie Donuts. These enquiring eyes are watching the activity in Nutie’s kitchen, which takes up most of the shop’s floor space. Customers are served from a street-facing display case and seating spills onto the footpath and under a sheltered alcove next door.

Self-taught baker Sina Klug and her business partner Jacques Dumont started their business with a second-hand oven. Back then they sold gluten-free and vegan baked goods from a stall at Bondi Farmers Market.

Choose from a rotating selection of gluten-free doughnuts, vegan brownies, Rocky Road and muffins. The doughnut menu includes flavours such as rosewater, pistachio and Belgian white chocolate; double chocolate and raspberry; salted caramel topped with a gluten-free pretzel; and beetroot and chocolate. There is also vegan flavours including Cherry Ripe and choc fudge.

The drinks list is extensive - pick from smoothies, turmeric lattes, chai, matcha and dairy-free milkshakes. Nutie’s nut mylk, a house-made blend of almonds and Brazil nuts, can be subbed into any milk-based drink. The bakery’s coffee machine takes pride of place in the shop’s front window and serves Dirty Blonde, an exclusive roast developed by Dumont.
