Hakata Gensuke Tanrei Series
Global ramen chain Hakata Gensuke first hit Australia in 2014. It’s now celebrating 10 years in Oz with its two-part Tanrei series. The limited-time offering will include four ramen dishes, launched in two chapters. Both chapters will feature two dishes available for six weeks each.
Tan means "lightness" and rei means "beauty". Usually known for its rich and creamy dishes, Hakata's special menu will focus on lighter-bodied ramen featuring clear broths and layered flavours.
The first chapter is already in full swing, running until July 14. It includes the Tonyu ramen and Basil ramen, both adding a creative spin on Hakata’s signature tonkotsu broth.
The Tonyu features a subtle sweetness and is infused with organic soy milk and topped with torched chicken thigh chashu, a soft-boiled egg, veggies and homemade thin noodles. The Basil has earthy and nutty notes with chicken chashu, sauteed king oyster mushrooms, tomatoes and bamboo shoots.
The second chapter of the series launches July 15, and consists of Wantan Men, featuring five pieces of hand-wrapped wontons filled with tender pork mince; and Uma Kara, a light tonkotsu broth sprinkled with fried garlic and swirl of dropped egg.
