In a small pocket of Leighton Beach, sheltered between the coastline and apartment complexes, is Palette, a restaurant and gallery that offers all-day beachside dining immersed in art.

Artist and co-owner Jade Van Herwaarde was frustrated at the lack of quality exhibition spaces available for emerging artists. So, alongside her partner Jason Witt and her mother Christina Scanlan, she opened her own space featuring work by emerging local artists. Staying true to her mission, Van Herwaarde doesn’t charge any fees and takes a minimal commission while also hosting opening nights.

Beyond being a gallery, Palette is also a fully-licensed restaurant open for all-day dining. Breakfast dishes might include pavlova French toast, baklava granola with rosewater and poached pears, and pumpkin Turkish eggs served with labneh and cinnamon chilli oil. The lunch and dinner menus are designed to be shared among friends.

For drinks, there are mostly Western Australian and French wines, many of which come by the glass or bottle. Plus, beers on tap, sharp cocktails and a handful of house spirits.
