Must Winebar
Features
From the bistro and bar, to a killer wine list and French eats, Must Winebar’s got it all. On a Saturday night, the whole of Beaufort Street seems to know it.
The restaurant is snug with a communal noisiness that stretches from the bar to the kitchen. The waiters are eternally busy but attentive, doling out baskets of the house-baked baguette, which usually ends up shattered all over the table. It’s not fine dining, but it’s so much more satisfying.
This is French food with local ingredients, no holds barred. The duck pate is infused with black truffles, the oysters are freshly shucked and the charcuterie is cured in-house. Mains are a cast of regulars that rarely ever leave the menu. Copy the rest of the dining room and order the steak frites with béarnaise sauce. Or the angel-hair pasta with blue manna crab and basil cream, which is rich, but balanced.
There’s also that wine list of repute. The cellar covers the globe but retains an emphasis on Aussie reds and an enviable range of champagne, adding a refined touch to any date night. Keep an eye out for the Must calendar of events that covers everything from exclusive wine dinners to seafood cooking classes.
