Sydney’s acclaimed fish butcher Josh Niland is taking over the Supernormal kitchen for a five-course lunch to celebrate the Melbourne launch of his new book.

Restaurateur, chef and fish butcher Josh Niland – known for his Sydney establishments Saint Peter and Fish Butchery – is publishing his first book, The Whole Fish Cookbook, in September.

To celebrate the launch in Melbourne, Niland’s taking over Andrew McConnell’s pan-Asian diner Supernormal for a one-off seafood feast. The five-course lunch – like all the recipes in his new book – will showcase his passion for sustainable produce, challenging the way we source, cook and eat fish.

Dishes on the night could include a wild kingfish stomach XO crumpet; a yellowfin tuna and swordfish-bacon cheeseburger; and a chocolate and Murray-cod-fat caramel crown for dessert.

Diners will leave lunch with a signed copy of The Whole Fish Cookbook.
