Editors’ Preview at Square One Rialto
Sitting at the base of the Rialto Tower, Square One is the latest venture from Nathan Toleman of the Mulberry Group. The new venue is the flagship offering for Square One Coffee Roasters – the Cremorne roastery founded by Toleman –the pioneering operator behind Melbourne’s Liminal, Lilac Wine and Hazel.
Toleman has tapped into some serious chef talent from Australia and abroad to help connect the city to the Mulberry Group’s regenerative community farm in Freshwater Creek. The Common Ground Project, located just an hour outside of Geelong, provides training and career pathways to people facing disadvantage. Every season, 10 different chefs will each contribute a menu item highlighting ingredients from Common Ground Project. The debut menu features contributions from chefs including Victor Liong (Lee Ho Fook), Nagesh Seethiah (Manze), hummus hero Tom Sarafian, Jemma Whiteman (Sydney’s Ante) and Nuno Mendes from London’s Lisboeta.
